Chocolate Banana Low-fat Cake

Make a cake and eat it too!! For those who love the combination of chocolate with bananas, this is a perfect cake to make that doesn’t have all the calories. I first made this cake with a recipe from scratch, but have found that using a boxed cake mix is much easier and faster.

Chocolate Banana Low-fat Cake

1 Box Dark Chocolate cake mix
1 Large Banana
3 Large Eggs
Fat-free Whipped Topping (8-12oz)
1 pkg. Sugar Free Vanilla or Banana Pudding mix
1 ¼ c. Skim Milk

Prepare cake according to direction on the box, using the amount of water called for, the three eggs, but omit the oil and use a direct volume conversion of mashed banana instead of oil. (It is a 1:1 ratio). Mix as directed and pour into 9x13 pan and bake as directed. In the meantime, prepare the “frosting.” Prepare the pudding mix with 1 ¼ c. skim milk, the pudding will be thick. Have the whipped topping thawed and fold pudding into whipped topping. Chill until ready to frost.

Once the cake is cooled, spread the pudding mixture over the top of the cake and keep in refrigerator until ready to serve. Cake can be cut into 24 pieces. Depending on the level of banana taste desired, the more ripe the banana, the stronger the banana taste. This cake is simple and saves about 600-700 calories from the cake by using a banana instead of oil. This cake will be denser than a cake made with oil, but to alleviate this problem, some skim milk maybe added to the banana to equal the replaced amount of oil.

After experimenting with this recipe, other fruit purees can be added to different cake mixes as well to keep them low in fat and add more flavor complexity.
