Spanakopita Style Scrambled Eggs

After returning home, I found I had a craving for something Greek one night. As is my tendency to just whip something up with whatever is on hand, that is just what I did. This recipe is based on a Greek item called Spanakopita which is Spinach Pie in Greek. It is a mixture of Feta cheese, spinach, onions, and a few spices between layers of phyllo dough.

Spanakopita Style Scrambled Eggs:

4 large eggs
5 oz frozen chopped spinach
1 small onion diced (optional)
1/4 -1/2 c. crumbled Feta cheese, depending on desired taste and level of salt

Crack eggs into a bowl, beat until beginning to be frothy. For a lower cholesterol or calorie option, the removal of one or two egg yolks is a possibility. Thaw the spinach and squeeze out excess liquid. Add the spinach and diced onion to the egg mixture. Pour the mixture into a pan sprayed with cooking spray and scramble. Just before eggs are cooked, add the feta cheese. Cook until eggs are no longer wet and runny.
Makes two servings.

This is a tasty and definitely lower calorie version of a Greek favorite!
